Across from Termini’s Bakery, Joe Termini has this little Italian eatery that is the closest any restaurant has come to my family’s cooking. Today I had crabs and macaroni which is a tomato gravy made with whole crabs, (back removed and cleaned ) instead of meats. The pasta was a spaghettini. With my eyes closed while eating this specialty dish, I could feel the heat of August after a day out crabbing in the marshes of New Jersey. While the aroma’s from my mother’s kitchen filled my senses, I could hear the multitude of conversations all around me. My family (my parents, grandmother, cousins, aunts, uncles , and my two brothers) and friends who were as close as family, were sitting around for hours talking and passing a joyous summer evening, being together and eating crabs and Macaroni.
I opened my eyes and finished my meal. Joe’s food is that good!!
And if you want the recipe just ask. I will proudly share it.
